Mum's famous cheesecake recipe- it wouldn't be a family party without it! We even had it at our wedding! Rich, indulgent and incredibly naughty...
Base Ingredients
120g Butter
200g Digestive Biscuits, about 12 biscuits
Topping Ingredients
200g Malteasers
300ml Double Cream
250g Cream Cheese
1tsp Caster Sugar
Glug of Baileys, about 2 tbsp but really pour until you're hearts happy!
Method
Place the biscuits in a sandwich bag and crush using a rolling pin until you have fine-medium rough crumbs. Put these into a mixing bowl with the melted butter and mix well.
Line the base of a 17cm/ 7inch circular spring pan with greaseproof paper. Scoop the base mixture into it and press down using the back of a spoon for an even base.
Refrigerate whilst making the topping..
Crush the maltesers in a sandwich bag until you have small chunks.
In another bowl, whip double cream and sugar together in a bowl using the electric whisk until soft peaks form. Fold in the cream cheese, Maltesers and Baileys.
Evenly spread the topping across the base and refrigerate overnight.
To serve, top with extra Maltesers and party hard!
Good to know:
You can make this cheesecake ahead of time by up to two days before the event- just make sure your ingredients use by dates allow and keep it in the fridge.
Allow the cheesecake to completely set before cutting into it, or the slices won't hold together.
