These chocolatey blondies are soft and chewey and loaded with pecans. Made in just one bowl (no mixer required!) this blondie recipe is the ultimate easy treat!
Ingredients
150g White Chocolate, roughly chopped
125g Unsalted butter, room temperature
150g Caster Sugar
2 Eggs, room temperature
1.5 tsp Vanilla Extract
200g Plain Flour
pinch Salt
120g Pecan Nuts, chopped
Method
Preheat the oven to 170C / Gas 3. Line a baking tray with greaseproof paper.
Melt the chocolate and butter together in a heatproof bowl over a saucepan of simmering water or in the microwave) until smooth, then remove from the heat.
Add into the chocolate mixture, the sugar, eggs and vanilla extract. Mix with a wooden spoon.
Add the flour, salt and pecan nuts and stir in until well until there's no visible flour.
Pour the mixture into the prepared baking tray and bake for about 35-40 minutes, or until golden brown and the centre is still soft.
Leave to cool, cut into squares and enjoy!
Good to know:
When adding the eggs, stir quickly so that you dont allow the eggs time to scramble. Don't worry if the mixture looks like it's starting to split.
Swap the pecans for chocolate chips to go nut free!
I love to use Lindt chocolate for baking with as it goes super silky when melted.
